Pesto is one of my favorite things to make at the start of the week to have with any of my meals. It is great to add as a spread or a sauce, especially for spaghetti squash or quinoa dish!
Pine nuts or Cashew
In a food processor, combine the cashews OR pine nuts, lemon juice, garlic, basil, salt, pepper, and pulse until well chopped.
With the food processor running, drizzle in the olive oil and pulse until combined.
*Optional, depending on preference:
For extra cheesy flavor, add 1 tablespoon nutritional yeast.
For brinier flavor, add 2 teaspoons of capers. F
or more umami, add 2 oil-packed sun-dried tomatoes.
For a smoother pesto, add more olive oil.
Briefly pulse to combine blend.
