This is my ultimate favorite recipe because of all of the flavors and colors it brings out! It is perfect for any gathering, holiday or as a side dish to almost any dish. Enjoy!
Serves: 4
Ingredients:
Multicolored, organic carrots
EVOO
Garlic Powder
Cumin
Za'atar spice
Labneh yogurt
Lemon juice
Pomegranates
Chopped Walnuts
Fresh herbs of your choice: rosemary or thyme

Instructions:
Wash and peel multicolored organic carrots
On a baking sheet, place carrots and drizzle with EVOO, sprinkle some garlic powder, cumin, salt and pepper
Roast for 30-35 minutes (check on them halfway thru and flip them so they evenly cook)
For the labneh spread, use:
1/2 cup of labneh
Mix with 1/2 lemon
A dash of cumin and za'atar
1 tablespoon of EVOO
Combine all ingredients in a mixing bowl and whisk until thick and creamy
With a spatula, evenly spread labneh in the center of your serving dish
Remove carrots from oven and place on top of labneh on the serving dish. I like doing alternating directions every other carrot
Top with pomegranates and chopped walnuts
Drizzle everything with a little EVOO
Sprinkle za'atar spice
Garnish with some herbs
